How to make fresh egg noodle

INGREDIENTS

  • 4 cups plain flour
  • 1 cup water
  • 1 egg
  • 1 tablespoon ash water (or edible lime water)
  • few drops of yellow coloring (i used tumeric powder)

METHOD

  • Mix above ingredients into a mixing bowl. Knead for about 10 minutes. Dough should not be too soft.
  • Let dough rest for 1 hour.
  • Make into small balls. Roll flat and coat with flour.
  • Put into the pasta machine, the smooth part. Repeat trice.
  • Coat the thin piece into enough flour and put through the noodle cutter on the pasta machine.
  • Mix water with some salt and oil and bring to boil. Pour the noodles into the boiling water for about 5 minutes. Keep stirring to avoid noodles from sticking to each other.
  • Pour noodles into a strainer and wash with running tap water.
  • When cold, rub noodles with oil.
  • Ready to use.

Resepi Keema

INGREDIENTS

  • 500g mince beef/lamb/mutton
  • a can of green peas
  • 4 big potatoes – diced
  • 2 tomatoes-quatered
  • 1 big onion – diced
  • salt for tasted
  • fresh milk – half cup
  • curry leave
  • mix spices – cinnamon,cadammon,anise star
  • Cooking Oil or ghee (I used oil)

To make a paste

  • 2 garlic
  • 10 of shallots
  • 2 packect of Baba’s curry powder
  • 5 tpbs of tamarind juice
  • (blend all ingredient B and make it as paste)

METHOD

  • Heat the oil, add curry leave and mix spice
  • then add the paste, fry till fragrance
  • then add mince meat, cover you pot
  • once meat cook , add potatoes
  • once potatoes cooked, add remaining ingredient and shimmer them till soft and mushy
  • then scope to serve with chappati or rice

Resepi Chicken Curry

INGREDIENTS

  • 2 pcs of chicken breat -cut to 8 pcs
  • 2 potato – cut to 4 pcs
  • 1 packet of Babas curry powder
  • mix spice – anise star, caddamon and cinammon
  • 2 tbs of onion paste
  • 1/2 tsp of garlic paste
  • 1/2 of ginger paste
  • 3 tsb of yogurt
  • 1 cups of water
  • salt to taste
  • 3 tsb of oil

METHOD

  • blend the onion, garlic and ginger curry powder
  • heat the oil, fry the mis spices
  • then add in the curry paste
  • fry and stir them till fragrance
  • then add chicken and potatoes, stir them
  • follow by yogurt, keep stirring
  • then add water and salt
  • Once the potatoes cooked
  • then off fire
