Simple Fried Noodles

INGREDIENTS

  • 1 pcs of chicken breast – sliced
  • 10 pcs of shrimps – cleaned
  • 1 pkt of fish ball
  • 2 tbs of oyster sauce
  • 5 tbps of soy sauce
  • 2 tbps of cooking oil
  • 1 tbps of garlic paste
  • 1tbps of onion paste
  • vegie – bean sprout
  • 1/2 pkt of rice noodle/mee hoon

METHOD

  • heat the oil
  • fry the onion and garlic untill fragrance
  • add in chicken breast then stir untill it cooked
  • then add in shrimp, stirr it half cooked
  • then add in fishball and follow by noodle
  • put in soy sauce and oyster sauce
  • mix them well and finally add the the vegie
  • stirr for a while then off fire
  • ready to serve.

NOTE: you may enjoy with chili pickles. for vegie, you could add more varieties like carrot, sawi etc.

Resepi Mee Rebus

INGREDIENTS

  • ½ cawan Udang gerago -Dikisar
  • ½ cawan Ikan bilis putih -Dikisar
  • 3 sudu makan Taucu (dicuci & tos) – Dikisar)
  • 1 senduk Cili Kisar
  • 2 sudu makan rempah kari daging
  • 2 batang Serai – kisar
  • ½ inci Lengkuas sedikit – kisar
  • 7 biji Bawah merah – kisar
  • 2 ulas Bawang putih -kisar
  • 1 inci Halia – Kisar
  • 3 ketul ubi keledek merah – rebus dan di lecek
  • 2 sudu Gula – ikut suka tahap kemanisan
  • Sedikit Garam
  • ¼ sudu kecil Serbuk kunyit
  • Kacang tanah ( disangai & dikisar)
  • 2 mangkuk Stok rebusan daging secukupnye

GARNISHING

  • Mi kuning – di celur
  • Tauge dicelur
  • Tauhu – digoreng
  • Daun bawang dan cili – dihiris
  • Telur rebus
  • Hirisan daging


METHOD

  • Panaskan minyak, masukkan bahan yang telah dikisar kecuali kacang tanah.
  • Tumis sehingga pecah minyak.
  • Selepas itu, masukkan air rebusan daging .
  • Masak hingga mendidih then masukkan keledek, kacang tanah,gula dan garam secukup rasa.
  • Reneh sehingga pekat.
  • Sedia untuk hiding.



How to make fresh egg noodle

INGREDIENTS

  • 4 cups plain flour
  • 1 cup water
  • 1 egg
  • 1 tablespoon ash water (or edible lime water)
  • few drops of yellow coloring (i used tumeric powder)

METHOD

  • Mix above ingredients into a mixing bowl. Knead for about 10 minutes. Dough should not be too soft.
  • Let dough rest for 1 hour.
  • Make into small balls. Roll flat and coat with flour.
  • Put into the pasta machine, the smooth part. Repeat trice.
  • Coat the thin piece into enough flour and put through the noodle cutter on the pasta machine.
  • Mix water with some salt and oil and bring to boil. Pour the noodles into the boiling water for about 5 minutes. Keep stirring to avoid noodles from sticking to each other.
  • Pour noodles into a strainer and wash with running tap water.
  • When cold, rub noodles with oil.
  • Ready to use.
