Resepi Ikan Singgang

tenggiri-singgang

INGREDIENTS

  • 3 keping ikan tenggiri (boleh guna ikan kembung, selar, tamban atau tongkol)
  • 3 keping asam keping
  • 1 inci hali – jgn hiris biar seketul
  • 1 inci kunyit – jgn hiris biar seketul
  • 1 inci lengkuas -hiris
  • garam secukup rasa
  • cili padi ikut rasa
  • 3 biji bawang merah – dihiris
  • 1 biji bawang putih -dihiris
  • sedikit gula melaka/manisan (optional boleh ganti ngan gula tak pun ajinomoto

METHOD

  • Rebus 3 cawan air bersama bahan-bahan di atas kecuali garam, gula,cili dan ikan
  • Bila mendidih masukkan ikan
  • Bila ikan agak masak , rasakan dengan garam dan manisan dan cili
  • Reneh sebentar, suaikan rasa, kalau tak cukup masam dan masin tambahlah apa yang patut
  • Sedia dihidang dengan nasik kosong.

Note: Kunyit dan halia tidak perlu dihiris sebab bila dah masak boleh makan buat ulam esp untuk orang dalam pantang.

Resepi Sotong Rebus

INGREDIENTS

  • 6 ekor sotong medium saiz – dipotong
  • 1 batang serai – diketuk
  • 2 biji bawang merah -dimayang
  • 1 biji bawang putih – dimayang
  • garam dan perasa secukup rasa
  • secawan air

METHOD

  • Air di masak bersama serai, dan bawang
  • apabila mendidih, masukkan sotong
  • bila sotong masak, rasakan garam dan perasa
  • Sedia untuk dihidangkan

Note: boleh tambah cili padi kalau nak pedas, tapi menu ini untuk kanak-kanak riang so no cili

Resepi Kari Kepala Ikan

INGREDIENTS

  • half fish head – I use red snapper
  • some curry leaves
  • 1 big Onion – sliced
  • 2 cloves garlic – scliced
  • 1 tsp mustard seeds
  • 2 packet curry powder – I used Babas and add some water to make a paste
  • A pinch turmeric powder
  • 2 tbps of tamarind paste + 1.5 cups of water
  • Salt To Taste
  • oil as required.
  • some vegie e.g egg plant or ladiesfinger – I don’t have one so nevermind

METHOD

  • Heat oil, fry mustard seed with curry leave
  • then add onion and garlic , stirred untill brownish
  • add curry paste and fry till the oil begins to float on top.
  • Add about tamarind juice. Bring the gravy to a boil
  • Add the fish head and cook for 15 minutes.
  • then add vegies.
  • Let it simmer for 5 minutes
  • Off fire, ready to serve

Resepi Siakap Kukus Dengan Serai

INGREDIENTS

  • 1 big fish – could be siakap, bawal emas or ikan sebelah
  • Lot of ginger (young ginger)- sliced
  • 2 stalks of lemongrass-sliced
  • 2 clove of garlic -minced
  • 3 limes -juice
  • 1 tablespoon of nampla sauce
  • 1 red chili -sliced
  • spring onion and coriander leave

METHOD

  • place your fish in a big plate
  • put in ginger, lemongrass,garlic , limes juice and nampla sauce
  • steam for 15 minutes
  • then garnish with spring onion and coriander leave
  • steam for 5 mins,
  • ready to serve

Resepi Asam Pedas Ikan Merah

INGREDIENTS

  • enough ikan merah
  • 10 pcs of dried chili
  • 7 red shallot
  • 2 clove of garlic
  • 1 inch belacan
  • 1 inch of turmeric
  • 2 stalk of lemon grass – knocked
  • 2 inch of gallangal – knocked
  • 1 bowl tamarind juice
  • 3tbps of cooking oil
  • daun kesum
  • salt , black pepper and ikan bilis granules

METHOD

  • blend chili, shallot,garlic,turmeric and belacan
  • heat oil, fry the paste untill you see the oil floated, add lemon grass and gallangal
  • then add tamarind juice
  • Once boiled, add fish let it boil again then add vegie follow by salt, pepper and ikan bilis granules
  • let it simmer for 10 minute
  • ready to serve

Asam Pedas dengan Belimbing Buluh

INGREDIENTS

  • 3 ekor ikan kerisi
  • 3 biji cili merah
  • 5 biji cili padi
  • 1 inci lengkuas
  • 3 biji bawang merah
  • 1 biji bawah putih
  • 1 inci kunyit
  • belimbing buluh yang kering secukupnya
  • garam dan pati ikan bilis secukupnye
  • 2 cawan air

METHOD

  • tumbuk bawang, cili, lengkuas dan kunyit
  • didihkan bahan tumbuk
  • bila mendidih masukkan ikan dan belimbing buluh kering
  • rasakan garam dan pati ikan bilis
  • renehkan sehingga mendidih
  • sedia untuk dihidang

Note: I tambah sedikit daun kesim to get more umph taste

Baked Salmon

INGREDIENTS

  • Salmon Steak – 2 pcs
  • salt, Dill and Pepper
  • 1/2 of lemon
  • Capsicum – Diced
  • Cherry Tomato – Quatered
  • Onion Diced – steamed
  • 1 tbps of Honey

METHOD

  • Preheat oven for 20 minutes at 200 celcius
  • Season salmon all over with salt, dill and pepper
  • Taste all the cut vegie with salt and pepper
  • Place salmon in baking dish with vegie and bake for 20 minutes
  • then pour some honey on the dish and bake for another 5 minutes
  • Once done, pour or sprinkle with lemon butter sauce
  • to prepare lemon sauce, heat a spoon of butter and add lemon juice untill boiled.
  • Serve with fried pasta.

Resepi Sup Ikan

INGREDIENTS

  • 4 pcs of Red Snapper
  • 1 tsp of ginger paste
  • 1 tsp of black paper – pound
  • 3 pcs of cadammon
  • 2 anise star
  • 1 stick of cinnamon
  • 2 clove of garlic and 5 shallot – pound to make paste
  • salt and white pepper for taste
  • for garnishing, fried shallots, chinese parsley and onion spring

METHOD

  • heat some oil, then fry cinnamon,anise star, cadammon then follow by onion+garlic+black pepper.
  • once brown, add in water
  • once boiled, add in fish
  • cook for 10 minute, taste with salt and paper
  • ready to serve.
  • garnish with fried shallots, chinese parsley and onion spring.

Finnish Salmon Soup

INGREDIENTS

  • 1 salmon fillet (500 – 600 gr)
  • 1 liters water
  • 2 white potatoes
  • 1 onions
  • 250 cream
  • 1 – 2 tsp salt
  • 1/2 tsp of ground black paper
  • 3 tbs shredded dill
  • 50 gr butter

    METHOD

    • Peel and cube the potatoes.
    • Cut each onion into 4 pieces.
    • Pour water into a saucepan and add the salt, peppers, onions and cubed potatoes.
    • Bring to a boil and allow to simmer at a low heat for approximately 15 minutes.
    • Cube the salmon fillet
    • Add the cream and shredded dill to the saucepan. Place the salmon cube in the soup and boil for approximately 5 more minutes.
    • Add the butter and decorate the soup with some shredded dill.
    • enjoy with garlic bread or white bread

    Speacial Fried Prawn

    INGREDIENTS

    • 1/2 kg of king prawn -marinated with some garlic and pepper
    • 1 cup of tempura flour
    • some minced onion spring
    • enough water
    • 3 cloves of garlics – minced
    • 2 thumb size of young ginger – chopped
    • 1 small bowl of tomato sauce
    • 2 tbps of chili sauce
    • 5 dash of nampla sauce
    • 1 tsp of oyster sauce
    • 2 tsp of sugar
    • 1 eggs
    • 1/2 bowl of water
    • 2 tbps of cooking oil

    METHOD

    • Mix tempura flour with water and onion spring
    • Coat the prawn with tempura flour
    • heat the oil and deep fry the prawn
    • for sauce,fry the garllic,chili paste and ginger
    • fry them till fragrance
    • add tomato sauce, chili sauce, nampla sauce and oyster sauce
    • stir it then add water water and sugar
    • stir it until it boiled and thick
    • then pour the sauce over the prawn.
    • ready to serve
